Did you know 40% of chefs do not possess the minimum level of qualification required to prepare and cook food from scratch.

Chef training is a key part of the tourism and hospitality skills agenda and you can find out more about the new City & Guilds Qualifications in Professional Cookery in this section. These replace the City & Guilds old 7062 Qualification, which was so highly regarded by senior chefs in the industry.

Nutrition and healthy eating are becoming a real commercial driver for many restaurants and this emphasis is likely to gain momentum over the next few years. More and more customers expect their special dietary needs such as food intolerances to be met when eating out or simply expect to see a choice of healthy options on the menu. To help you focus on these issues, you can take specific Units of the City & Guilds Qualifications that deal with nutrition and healthy eating on a stand-alone basis.

As healthy eating is high on various agendas these days, you may be interested in the Chefs Adopt a School project. This project teaches young people respect for food, food provenance, nutrition, health & hygiene and engages them in cooking as a lifestyle.
